Bamboo Shoot Lumpia/ Spring Roll (Lumpia Rebung)






If you're an Asian cuisine enthusiast, you've definitely heard this snack, Lumpia. It's crispy on the outside and piping hot on the inside. Lumpia are made with thin paper-like or crepe-like pastry skin called 'lumpia-wrapper' enveloping savory or sweet fillings.  Here, where I live, in Indonesia, Lumpia is usually filled with bamboo shoots. Some people may don't like them because they smell funky if you don't process the bamboo shoots properly. Here's what you need to do to make lumpia.

Ingredients :

  • 250 g Bamboo Shoots (Julienne cut)
  • 50 g mushroom (Diced)
  • 2 Eggs
  • 5 cloves of garlic (Minced)
  • Lumpia wrapper (Store-bought, ain't nobody got time to make that haha)
  • Salt
  • Pepper
  • Oyster sauce
  • Lots of Water
  • Oil

Tools :

  • Wok
  • Strainer
  • Frying pan
  • Tongs

Directions :

Begone funky smell !!

  1. Cut the bamboo shoot (Fine Julienne)
  2. Wash the bamboo shoots properly
  3. Boil up some water. Wait until the water starts bubbling, then add the bamboo shoots
  4. Boil the bamboo shoot for 15 minutes. 
  5. Strain the bamboo shoots, wash it again. The bamboo shoot is still smelly at this point, but don't worry, we'll get there. 
  6. Boil another batch of water. Wait until the water starts bubbling, then add the bamboo shoots.
  7. Boil the bamboo shoot again for 10 minutes. Don't worry about the bamboo shoots become mushy, it will stay crunchy even after we cook it many times. 
  8. Strain the bamboo shoots, wash it again. At this point, the smell has already gone. But, we'll cook them once more.
  9. Boil another batch of water. Wait until the water starts bubbling, then add the bamboo shoots
  10. Boil the bamboo shoot again for 10 minutes.
  11. Strain the bamboo shoots, wash it again. 
  12. No more urine smell. 
  13. Your bamboo shoot is ready to use
Stir up !!

  1. Place a wok over a high heat.
  2. Pour 1 tbsp of oil
  3. Pour garlic and let the color change a bit
  4. Pour bamboo shoot
  5. Pour mushroom
  6. Crack the eggs, and scramble them
  7. Season with pepper, salt, and oyster sauce (Adjust to your liking)
  8. Stir in until mixed well
  9. Remove from the heat and set aside until cool enough to handle

Wrapping !!
  1. Take 2 lumpia wrappers. Yes, 2. Why? Because if you only use 1 wrapper it will be torn up easily. 
  2. Make a diamond shape using the wrapper. 
  3. Place 1 1/2  tbsp of filling in the middle of the wrapper
  4. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly.
  5. Keep the roll tight as you assemble
  6. Moisten the other side of the wrapper with water to seal the edge
  7. Use 2 wrappers to avoid the tear

Deep fry !!
  1. Heat up the frying pan in a medium heat
  2. Pour the oil
  3. Slide 7-8 lumpia in the frying pan
  4. Let them swim for about 1-2 minutes
  5. If the color has turned to a golden brown, take them out.
  6. Drain on paper towels
  7. Serve immediately
