Banana Bread



Hi guys, Happy Ramadhan Kareem. How's your fasting going on? I hope everything goes well despite the Covid 19 situation. Today, I want to show you how to make a healthy breakfasting menu. It is soft, fluffy, fragrant, sweet, and nutrients packed. 

Yes, it is banana bread. Banana bread is usually made of flour, eggs, and banana, but here I'm going to make it with oats. Why? Because I don't have any flour left in my pantry. So oats it is haha. Let's get cooking!!

Ingredients :
  • 5 Overripe banana (The overripe banana is the one that has dots on the skin, it is sweeter and more fragrant than the ripe ones. Since it is already sweet, you don't need to add more sugar )
  • 10 tbsp of rolled oats (ground). If you don't have oats, you can simply use all-purpose flour. 
  • 2 eggs
  • 1 tbsp chocolate powder
  • 1 tbsp vanilla extract
  • 1 tbsp baking soda
  • Mixed nuts (I like something crunchy. I use almond, sunflower seed, and pumpkin seed)
  • Dates (It is not a Ramadhan month if you don't have dates in your dish haha)
  • Butter
You can easily find these ingredients in your pantry

Tools :
  • Oven (obviously)
  • Loaf pan
  • Blender (if you don't have one, you can just use fork or spoon to mix all the ingredients. Mine was broken because God knows why my brother just made the blender exploded. So I'm using a bowl and fork to mix the ingredients) 
  • Toothpick
Directions :
  1. Preheat the oven until 100℃
  2. Mash the banana. I use 4 1/2 of them. I'm saving the half for the topping.
  3. Crack the eggs
  4. Add the rolled oats and chocolate powder.
  5. Add vanilla extract and baking soda
  6. Mix them well. Make sure there is no lump.
  7. Grease the loaf pan using butter so it won't stick when you want to take the bread out. If you don't want to add butter, you can use parchment paper.
  8. Pour the mixed ingredients to the loaf pan.
  9. Slice the remaining banana that you save earlier thinly and put it on top of your batter.
  10. Chop the dates and put it on top of your batter.
  11. Sprinkle the mixed nuts on top of your batter. 
  12. Make sure you spread the toppings evenly, so you get that crunchiness in every bite
  13. Your batter is ready
  14. Put it in the oven carefully, cuz I almost burnt my finger 
  15. Let it sit in the oven for about 45 minutes.
  16. While you're waiting, clean that mess you created earlier.
  17. After 45 minutes, check if it's cooked using a toothpick. Poke the middle of the bread, if you see the batter stick to your toothpick wait for another 10 minutes. If there isn't any batter stick to the toothpick then it is done. 
  18. Take it out from the oven. 
  19. Let it cool for about 10 minutes. Once it's cooled down a bit, move it to your most beautiful plate. 
  20. Slice it nicely and serve it to your loved ones

Easy, right? You only need about 10 minutes to prepare it, and let the oven do the rest.
