Martabak/ Murtabak/ Mutabbak/ Matabbak

Martabak is an omelet pancake filled with bits of vegetables and minced meat. It is a popular street food in Indonesia. It is crispy on the outside, moist and juicy on the inside. There are many ways to make this dish. Some wrap them in a pastry-like wrapper and deep fry them. Some make the wrapper from scratch. While me, I'm making my own version of it. It is super easy and quick. Let's get cooking!!

Ingredients :
  • 5 Eggs
  • 50 g Mushroom
  • 50 g Carrot
  • Green onions
  • Leftover lumpia wrapper (It doesn't matter if it's small or big. I'm using a 20cm x 20cm wrapper)
  • Salt
  • Pepper
  • Garlic Powder
  • Oil
Tools :
  • Non-stick pan
  • Spatula
  • Spoon
Directions :
  1. Dice the mushroom, carrot, and green onions. Make them really small because you want every bit of them in your martabak. 
  2. Beat up the eggs. Mix well with the diced mushroom, carrot, and green onions. 
  3. Season it with salt, pepper, and garlic powder, then mix them.
  4. Heat up the pan in low heat.
  5. Pour 1 tbsp of oil into the pan
  6. Place the first lumpia wrapper in the center of the pan
  7. Take the egg mixture using the spoon, and pour it on top of the wrapper. Spread it nicely and carefully. Make sure it covered all the wrapper, but you don't want them to cross the wrapper's edge. 
  8. Place the second lumpia wrapper on top of the egg mixture and seal the edge by pressing it using a spatula.
  9. Turn up the heat and sear the martabak for 3 minutes
  10. Flip the martabak and you will see a beautiful sear mark on the wrapper
  11. Now, we're gonna make the sear on the other side. 
  12. Add 1 tsp of oil into the pan. Spread them evenly. You want to make sure the oil gets into the bottom of the martabak. 
  13. Wait for about 3 minutes.
  14. Take your martabak out. It is nicely seared, glistening, crispy and yummy👌
  15. Repeat the steps, and you will have 5 martabak using this recipe
  16. Serve them immediately.
